A large 2026 cohort study published in Hepatology International followed 82,259 adults with detailed dietary records and blood metabolic profiling, and the finding is about as clean as observational science gets: people who followed healthy dietary patterns - the Mediterranean diet, the MIND diet, and others - had 24-41% lower risk of developing MASLD, and up to 44% lower cirrhosis risk, compared with those who did not.
The study went one step further than the usual diet-outcome link. By measuring hundreds of circulating metabolic chemicals, the researchers showed that about a quarter of the protective effect ran through changes in blood fats and lipoproteins - the diets were not just correlated with better outcomes, they were changing the chemistry in measurable ways. Mendelian randomization analysis supported a causal relationship between the healthy patterns and reduced liver disease risk.
Which patterns, and what they share
